Slow Cooker Summer Barbacoa

This slow cook barbacoa beef is so flavorful and tender, and it’s so easy to make and versatile! We like to make tacos with it for a simple weeknight meal, but it’s also delicious on crisp corn tortillas, burrito bowls, in enchiladas, or just about any other use you can think of for spicy shredded beef.

  • 1.Turn heat to high and heat oil in the bottom of slow cooker.
  • 2.Add the diced beef and brown for 10 minutes. Add all the remaining ingredients and give it a good mix.
  • 3.Cook on high for 2-3 hours then turn the heat down to low for 1-2 hours.
  • 4.When the beef has fallen apart serve in soft or crisp corn tortillas with fresh salsa, sour cream, lime wedges, and chopped cilantro.


  • 3lb (1.36kg) Diced Stewing Beef
  • 1 tbsp olive oil
  • 3 cloves garlic
  • 1/2 white onion, diced
  • 2 tbsp apple cider vinegar
  • 120ml beef broth
  • 1 tbsp ground cumin
  • 2 teaspoons chipotle powder
  • 1 tbsp Mexican oregano (dried, or regular oregano)
  • 1 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon ground cloves
  • 2 bay leaves
